The Baja Brewing Company is the only Brew Pub and Microbrewery in the state of Baja California.  Their equipment was manufactured by Specific Mechanical Systems in Canada and has been in use at brewery from the start.

 

High quality fresh ingredients:
MALTED BARLEY: They use a dozen different varieties of malted barley from Canada, the US and Germany.  Barley adds color and flavor to the beer.

HOPS: Are green flowers that grow on vines and are grown in colder climates.  They use varieties from the northwestern United States and Europe.  Hops add bitterness to the beer as well as flavor and aroma.

YEAST:  Yeast is the microorganism that ferments the beer.  It does this by eating the sugars in the wort and transforming them into alcohol and Co2.

WATER:  Their water comes to them from the Sierra de la Laguna mountains via underground aquifers and is excellent water for brewing.

 

 

 

 

BREWING PROCESS

After the “wort” or green beer is finished it is transferred into the fermenting vessel.  There the yeast is added and the fermentation process begins.  Primary fermentation may take a few days to a week.  After that we reduce the temperature and let the beer finish fermenting and mature for 2 to 8 weeks depending on the style of beer we are creating.

Next the beer is moved to a serving tank and finally into a pint or bottle.
